Ingredients: Tomato, rainbow peppers, aubergines, courgette, green beans, onion, garlic, basil, oregano, thyme, extra virgin olive oil, salt.
Weight: 250g (serves 1) and 450g (serves 2) with 100g of dry pasta per person.
Suggestions: My mama used to make a similar version to put on top of Focaccia. Try it yourself over some toasted bread, I love it with Prawns also. A wine to fit nicely with this sauce is Grillo, a white wine from Sicily.
